Ingredients
  

Chicken
  • 700 g Boneless chicken thighs skinless
  • 1 medium Onion quartered
  • 1 tsp Turmeric
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 cups Water for cooking the chicken
Rice
  • 3 cups Rice rinsed and soaked for 30 minutes
  • 2 tbsp Salt for parboiling the rice
Saffron Yogurt Mixture
  • 1 cup Plain Greek yogurt full-fat
  • 3 large Egg yolks
  • 1/3 cup Vegetable oil plus extra for greasing
  • 1/4 cup Unsalted butter melted
  • 1/4 cup Brewed saffron strongly concentrated
Garnish
  • 2 tbsp Barberries (zereshk) rinsed and drained
  • 1 tbsp Sugar optional, for the barberries
  • 2 tbsp Slivered pistachios optional
  • 2 tbsp Slivered almonds optional

  • 1 Baking Dish 9 × 13 inch (23 × 33 cm)
  • 1 Fine-Mesh Strainer For draining the rice

Method
 

PREPARE THE CHICKEN
  1. Place the chicken thighs, quartered onion, turmeric, salt, black pepper, and water in a medium saucepan. Bring to a boil, then reduce the heat, cover, and simmer for 25–30 minutes, or until the chicken is fully cooked and tender.
  2. Remove the chicken from the cooking liquid and allow it to cool slightly. Shred or cut it into bite-sized pieces and set aside.
PREPARE THE RICE
  1. Rinse the basmati rice several times until the water runs mostly clear. Cover with water, add salt, and soak for 30 minutes. Drain before cooking.
  2. Bring a large pot of water to a rolling boil. Add the soaked rice and cook for approximately 5–7 minutes, until the grains are soft on the outside but still firm in the center.
  3. Drain the rice immediately through a fine-mesh strainer and rinse briefly with lukewarm water. Allow it to drain thoroughly.
PREPARE THE SAFFRON MIXTURE
  1. Finely grind the saffron threads and steep them in a small amount of hot water for 10–15 minutes to make a strong, concentrated brewed saffron.
  2. In a large mixing bowl, whisk together the Greek yogurt, egg yolks, vegetable oil, melted butter, and brewed saffron until smooth and evenly combined.
  3. Gently fold the drained parboiled rice into the saffron-yogurt mixture until every grain is evenly coated and golden.
ASSEMBLE & BAKE
  1. Preheat the oven to 375°F (190°C). Generously grease a 9 × 13-inch (23 × 33 cm) baking dish with vegetable oil.
  2. Spread approximately half of the saffron rice mixture evenly over the bottom of the baking dish. Gently press it down with the back of a spoon or spatula to create a compact, even layer.
  3. Arrange the cooked chicken evenly over the rice, keeping it slightly away from the edges of the baking dish.
  4. Cover the chicken with the remaining saffron rice. Spread evenly and gently press the surface to compact the Tahchin.
  5. Cover tightly with aluminum foil and bake for 60 minutes. Remove the foil and continue baking for 20–30 minutes, until the edges and bottom are deeply golden and crisp.
REST & SERVE
  1. Remove the Tahchin from the oven and allow it to rest for 15 minutes. This helps it hold its shape when inverted.
  2. Run a thin knife or spatula around the edges. Place a large serving platter over the baking dish and carefully invert the Tahchin onto the platter, with the golden crust facing upward.
  3. Briefly sauté the barberries with sugar until glossy. Garnish the Tahchin with the barberries, slivered pistachios, and slivered almonds. Serve warm.

Notes

For the best Tahchin, use high-quality basmati rice and avoid overcooking it during the parboiling stage. The rice should remain firm in the center, as it will continue cooking in the oven.
Use full-fat Greek yogurt for a richer flavor and a firmer texture. Make sure the saffron is strongly brewed to achieve Tahchin’s characteristic golden color and aroma.
Grease the baking dish generously, especially around the bottom and edges. This helps develop a crisp golden crust and makes the Tahchin easier to release.
When layering the chicken, keep it slightly away from the edges so the saffron rice can form a continuous crispy crust around the dish.
After baking, allow the Tahchin to rest for 15 minutes before inverting it. Resting helps the rice cake hold together and reduces the chance of breaking.
Barberries can burn quickly. If using them as a garnish, sauté them very briefly over low heat. Sugar is optional and can be adjusted according to taste.
For the best texture, serve Tahchin warm while the exterior is still crisp.
